To bring a simple, light and quick dish to the table, the best choice to make in hot weather is undoubtedly fast and sometimes even cold dishes.
The choice is varied and ranges from numerous meat and fish dishes. Green light to seafood and chicken breast salads, to salads rich in any ingredient, from corn to shrimp. Yes also to the salty empanadas, which are always very successful thanks to their goodness and ease of preparation.
Another very valid alternative would be to bring delicious and quick rolls to the table. Not the classics based on cabbage or meat, but the sensational salmon rolls.
For a quick and light lunch, this is the delicious second course to fill up on omega 3.
Today’s recipe has salmon as a basic ingredient. A food that belongs to the oily fish family, a species especially rich in omega 3, that is, good fatty acids and vitamin D.
To make our recipe even tastier, fresh cheese spread was added. A particularly soft cheese that lends itself well to many recipes. It is also ideal to spread on slices of bread or to add to first courses rich in tasty tomato sauce or pesto.
For the choice of spreadable cheese we could opt for a particularly lean type, the quark.
Salmon and cheese cones
Ingredients:
- 1 package of spreadable cheese;
- 60 g of sliced smoked salmon;
- 100 g of potatoes;
- 50 g of yogurt;
- Salt and pepper to taste;
- aromatic herbs of your choice.
Method
Wash and peel the potatoes, cook them in boiling water previously salted. When they are cooked, drain them and let them cool. Meanwhile, cut off small pieces of salmon from the excess smoked slices. In a bowl, mix the pieces of salmon with the cream cheese, salt and pepper. Fill the salmon slices with the cream cheese spread and close them on themselves, giving them the shape of a small cone. Cut the boiled potatoes into slices and arrange them on a plate; season with yogurt and dill leaves.

Alternatives
If we do not like the taste of salmon, we can opt for the creation of smoked swordfish rolls. Simply replace the salmon slices and cubes inside the cream cheese with swordfish.
If we are still not satisfied, we can use slices of smoked tuna to create our delicious recipe.
Finally, if we want to surprise everyone, we could decide to prepare the recipe in all three variants and serve them all together.
