Ingredients for the dough: 1 kg of type 0 flour, 650 g of water, 12 g of brewer’s yeast, 80 g of lard, 22 g of salt
for the filling: 400 g of white onions

yeast: the dough is left to rise for 2 hours at room temperature.
600 gram pieces are left to ferment for 30 minutes at room temperature.
Spread out the pieces that are allowed to grow for 30 minutes at room temperature.
Seasoned pizzas are allowed to rest for 1 hour at room temperature.
Cooking: 250° for 20 minutes

Preparation: In the bowl, pour the type 0 flour, the crumbled brewer’s yeast, almost all the cold water, mix and then add the salt and the rest of the water. We knead and only at the end we add the butter but little by little we are completing the dough. Now we add two onions or even less that we have chopped very fine, mix well, cover and let stand 2 hours at room temperature.

We pour the dough on the table, divide it into 600 g pieces and make a fold for both blocks. Arrange on the greased mold and cover, let rise for 30 minutes at room temperature, then spread in the mold almost to the edges. Cover and let rise another 30 minutes. Now we return to stretch the pizza completely and season with the onions that we have cut into thin slices and seasoned with oil. We go up and cover, another 1 hour of yeast. Bake at 250 degrees for 20 minutes.
