Salmon bites with cornflakes, recipe for the most demanding children

We know that every time it’s a real struggle to take children at the tableespecially if you are not dealing with pizza and chocolate, or pre-packaged snacks that are bad for your health and provide nothing but fat and a lot of carbohydrates.

This recipe from salmon with a crispy cornflake coating however, it is a really tasty alternative that allows you to have fun but also to savor an unexpected combination that is also very pleasant on the palate.

Ingredients and preparation of salmon with crispy cornflakes

We use mustard to tenderize the salmon but you can also use a wet with mayonnaise and chopped parsley with a knife.

  • 600g salmon fillet
  • 1 jar of non-spicy mustard
  • 60g cornflakes
  • Parsley to taste
  • Salt and pepper to taste.

PREPARATION (about 40 min)

Preheat the oven at 180°C and line a large baking sheet with parchment paper.

Remove any remaining bones from the salmon fillet with tongs, then cut into thin slices about 2 cm thick. Spice with salt and pepper.

Alternatively, you can also use frozen salmon filletsthose found on the freezer counter and that have a certified and guaranteed origin in accordance with EU regulations.

Crumble the cornflakes into coarse pieces and then proceed with the assembly: start by spreading the mustard on the salmon slices previously placed in the pan, then the finely chopped parsley and finally the cornflakes.

Cook for about 12-15 minutes to be still a little pink in the center. Serve with fresh peas or some spice glazed baby carrots freshly seasoned with a drizzle of extra virgin olive oil.
