Ingredients and preparation of salmon with crispy cornflakes

We use mustard to tenderize the salmon but you can also use a wet with mayonnaise and chopped parsley with a knife.

INGREDIENTS

  • 600g salmon fillet
  • 1 jar of non-spicy mustard
  • 60g cornflakes
  • Parsley to taste
  • Salt and pepper to taste.

PREPARATION (about 40 min)

Preheat the oven at 180°C and line a large baking sheet with parchment paper.

Remove any remaining bones from the salmon fillet with tongs, then cut into thin slices about 2 cm thick. Spice with salt and pepper.

Alternatively, you can also use frozen salmon filletsthose found on the freezer counter and that have a certified and guaranteed origin in accordance with EU regulations.

Crumble the cornflakes into coarse pieces and then proceed with the assembly: start by spreading the mustard on the salmon slices previously placed in the pan, then the finely chopped parsley and finally the cornflakes.

Cook for about 12-15 minutes to be still a little pink in the center. Serve with fresh peas or some spice glazed baby carrots freshly seasoned with a drizzle of extra virgin olive oil.
