We blend with the red wine, which can be a good dolcetto or a barbera dry and without foam. At this point, lower the heat and let it simmer for at least two hours. Season with salt and bay leaves, then serve.

Generally this recipe goes with polenta, but we can also associate it with baked potatoes. As for the wine with which to pair it, we can choose between two alternatives. We can choose the same wine with which we mix the meat or a medium-bodied red wine. This dish is typical of the peasant tradition of the Po plain and especially of Novara.
